One of the most sought-after cheeses by the gourmands is doubtlessly the ricotta (literally meaning “recooked”) made from buffalo milk serum. It is produced with the buffalo milk coming from the curd. Such mixture is brought to a temperature of 80-90 °C, and after about ten minutes wait ricotta is ready to be placed in the specific plastic containers.  

With its pearly white colour and irresistible sweet taste, it is different from other ricottas for its flavor and texture.
